Gluten-Free Raw Zucchini Pasta with Avocado Sauce

This recipe serves one.

INGREDIENTS
  • 1 large zucchini
  • 1 avocado
  • 1/2 tspn Himalayan sea salt
  • 1/2 tspn lemon juice
  • ground pepper
  • homemade Cashew Parmesan
CASHEW PARMESAN
  • 1 c raw, unsalted cashews
  • 1 tbsp nutritional yeast
  • 1/2 tspn Himalayan sea salt
PREPARATION
  1. Wash zucchini.
  2. Using the instructions that came with your spiralizer, secure the zucchini on the spiralizer and spiralize your zucchini. Place the zucchini pasta in a bowl.
  3.  Sprinkle spiralized zucchini with salt and give it a gentle mix. Set aside for 20 minutes.
  4. Peel the avocado, and put in a blender or food processor, mix with the rest of salt, lemon juice, ground pepper and blend until smooth. Taste and add more lemon juice or salt to taste.
  5. Drain zucchini from the water it has lost and put back in bowl.
  6. Add avocado cream and give it a good mix.
  7. Serve on plate and top with cashew parmesan (optional).
  8. To prepare the Cashew Parmesan: Combine all ingredients in food processor and pulse until fine. Enjoy!
